Simple Roast Chicken

Ingredients:
- 1 whole chicken
- Cooking oil
- Salt
- Freshly ground black pepper
- 1 Lemon (zested, optional)
- Fresh herbs (thyme and rosemary)
Instructions:
1. Prepare the Chicken
- Remove the wishbone to make carving easier.
- Truss the chicken (optional) for a more uniform shape.
- Brush oil all over the chicken for even cooking and crispy skin.
- Season generously with salt and black pepper.
- Stuff the cavity with fresh herbs and lemon zest for extra flavor.
2. Insert the Thermometer
Insert the Combustion Predictive Thermometer deep into the chicken, aiming toward the wing joint
3. Preheat & Roast
- Preheat the oven to 400°F (205°C).
- Set the Combustion app to 140°F (60°C), allowing for carryover cooking to reach 150°F (65°C) for juicy meat.
- Place the chicken in a roasting pan and put it in the oven.
4. Monitor & Cook
- Use the Combustion app or display to track the temperature.
- Expect the ambient temperature around the chicken to be lower at first due to steam evaporating.
- As the skin dries and crisps, the temperature will rise, and the chicken will start turning golden brown.
5. Rest & Serve
- When the timer hits zero, remove the chicken from the oven.
- Let it rest for 10 minutes to allow the temperature to stabilize for easier carving.
- Carve and serve warm.
